Spicy Beef and Noodle Salad

What you need
300g of leftover roast beef sliced into bite sized chunks
2 small shallots thinly sliced
2 plum tomatoes thinly sliced
2 cloves of garlic finely minced
1 small bunch of fresh coriander finely chopped
2 tbsp of Thai sweet chilli sauce
juice of 1 lime
2 tsp Thai fish sauce
pinch of salt
1 cucumber thinly sliced
1 bunch spring onions thinly sliced lengthways
150g dried egg noodles
How to cook
Cook the noodles according to packet instructions.
Whisk together the salt, lime juice, chilli sauce, garlic, shallots and fish sauce.
Mix the beef, cucumber and spring onion in with the dressing and taste to check the balance of flavours. Add extra chilli sauce or lime as desired.
Drain the noodles and add to the beef mixture and serve.
