The hock is the portion of a pig's leg that extends from approximately half way down the leg to the hoof. It requires a longer cooking period, and is suitable for use in soups, stews and braised dishes where it adds richness and flavour.
This cut is surprisingly delicious and moist and the paprika gives a lovely sweet and smoky flavour.
A pork hock braised with aromatic soy is a fabulous recipe. If the salt content worries you, use reduced-sodium soy sauce.
